This tofu scramble is bold, flavorful, and packed with all the goodness. Perfect for a Black queen stepping into her plant-based era! 🌟
Ingredients
- 1 block extra-firm tofu (pressed to remove excess water)
- 1 tbsp olive oil or avocado oil
- 1/2 red onion, diced
- 1/2 red bell pepper, diced
- 1 cup kale or collard greens, chopped
- 1/4 cup nutritional yeast
- 1 tsp turmeric (for color and flavor)
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black salt (or sea salt for a savory kick)
- 1/4 tsp black pepper
- Optional: A splash of plant milk (for creaminess)
Instructions
- Prep Your Tofu: Crumble the pressed tofu into bite-sized pieces with your hands. Set aside.
- Sauté the Veggies: Heat oil in a skillet over medium heat. Add the onion and red bell pepper, cooking until softened (about 3-4 minutes).
- Add the Greens: Toss in the kale or collard greens and sauté until wilted.
- Season the Tofu: Add the crumbled tofu to the skillet. Sprinkle in turmeric, smoked paprika, garlic powder, onion powder, black salt, black pepper, and nutritional yeast. Stir well to coat.
- Adjust Texture: If you prefer a creamier scramble, add a splash of plant milk and mix until it’s heated through.
