Try This Golden Girl Juice Recipe If You Want To Change Things

If you are anything like me then you are looking for ways to keep healthy and boost your immunity.  Can juicing boost immunity?  And, what does pineapple ginger and carrot do for the body?

Try this Golden Girl Juice if you want to change things.  Sweet with a kick from ginger and lemon, this recipe can be enjoyed year around and is both anti-inflammatory and rich in essential nutrients.

Allow yourself to expand and eliminate your boundaries.

GOLDEN GIRL JUICE RECIPE

  • 2 lemons, peeled (skin and pits removed) (use 1 lemon for the blender method)
  • 1 inch (2.5 cm) knob of fresh ginger (or 1/2 tsp ground ginger; add more if you want a more spicy juice)
  • 1 inch (2.5 cm) knob of fresh turmeric (or 1/2 tsp ground turmeric)
  • 6 medium to large carrots (use 4 carrots for the blender method)
  • Optional: 1 cup (170 grams) frozen or fresh pineapple, peeled and cored pineapple cut into pieces (use half a cup for the blender method).

INSTRUCTIONS

For the juicer method:

Wash and (if you want to) peel the ginger, turmeric, and carrot. If you don’t peel the carrot, ginger, and turmeric, wash them thoroughly.  Peel the lemon (the white inside is ok).  If necessary, cut the ingredients so they can fit in the juicer.  Juice and serve immediately.

For the blender method:

Wash and (optional) peel the ginger, turmeric, and carrots.  Remove the skin and pits from the lemon.  Add the carrot, ginger, turmeric, lemon, and 1 cup of water to a blender. Blend slowly and then increase the speed. All ingredients should be well blended. If the mixture is too thick, add more water.  Pour the mixture through a strainer or nut milk bag and remove the pulp (fiber). Serve the juice immediately.

The Magical Power of Juicing

Juicing is the single most powerful way to lose weight, heal the body and turn back the clock. Juice fasting is not some new health fad.  I am recommending a daily juice for everyone plus juice cleansing four times a year, preferably with the changing seasons.

What's the best juice to boost your immune system?

  1. Oranges + grapefruits. Oranges and grapefruits are packed with vitamin C which is essential for a healthy immune system.
  2. Green apples + carrots + oranges.
  3. Beetroots + carrots + ginger + apples.
  4. Celery.
  5. Cucumber.
  6. Watermelon.

Hello there, lovely members of the Sisters to Sister organization.  This month's blog post is all about what I call "Liquid Nutrition"

  1. Nutrient-Rich Ingredients: Incorporate fruits, vegetables, and superfoods like kale, spinach, berries, chia seeds, and flaxseeds into your smoothies. These ingredients provide essential vitamins, minerals, and antioxidants that support overall health.
  2. Protein Power: Adding sources of protein like Greek yogurt, almond butter, or plant-based protein powder can help maintain muscle health and keep you feeling full and satisfied.
  3. Healthy Fats: Include ingredients like avocado, coconut oil, or nuts to provide healthy fats that support brain health and satiety.
  4. Hydration: Use coconut water, herbal teas, or almond milk as the base for your smoothies to stay hydrated.
  5. Customization: Tailor your smoothies to your specific wellness goals, whether that's boosting energy, supporting immune health, or aiding digestion.
  6. Consistency: Incorporate smoothies into your daily routine for sustained benefits. A consistent intake of nutrient-dense foods can have a significant impact on your overall health.

Nourish your body, mind and spirit with self-care in liquid form.

Yummy Vegan Recipe:

Creating a vegan smoothie that supports weight loss for Black women, or anyone, involves choosing ingredients that are nutritious, low in calories, and high in fiber. Here's a delicious and nutritious vegan smoothie recipe:

  • 1 cup of unsweetened almond milk (or any unsweetened plant-based milk
  • 1/2 cup of frozen mixed berries (blueberries, strawberries, raspberries)
  • 1/2 ripe banana (for natural sweetness and creaminess)
  • 1 tablespoon of chia seeds (for fiber and healthy fats)
  • 1 tablespoon of ground flaxseed (for additional fiber and omega-3 fatty acids)
  • 1 cup of fresh spinach (for vitamins, minerals, and fiber)
  • 1/2 small avocado (for creaminess and healthy fats)
  • 1 teaspoon of matcha green tea powder (for antioxidants and a mild caffeine boost)
  • 1 teaspoon of agave nectar or maple syrup (optional for added sweetness)
  • Ice cubes (optional, for a colder and thicker smoothie)
  1. Start by adding the almond milk to your blender as the base.
  2. Add the frozen mixed berries and the ripe banana. These fruits provide natural sweetness, fiber, and antioxidants.
  3. Include the chia seeds and ground flaxseed. These seeds are excellent sources of fiber and healthy fats, which help you stay full.
  4. Toss in the fresh spinach for added nutrients and fiber. Spinach is low in calories but high in vitamins and minerals.
  5. Add the avocado for creaminess and healthy monounsaturated fats, which help keep you satisfied.
  6. Incorporate the matcha green tea powder for its antioxidant properties and a mild caffeine boost to support your metabolism.
  7. If you prefer a sweeter taste, add a teaspoon of agave nectar or maple syrup. Adjust the sweetness to your liking.
  8. If you want your smoothie to be colder and thicker, add some ice cubes.
  9. Blend all the ingredients until you achieve a smooth, creamy consistency.
  10. Pour your weight loss vegan smoothie into a glass and enjoy!

Smoothies and self-care can be powerful tools for today's Black women to enhance their physical and emotional well-being.  This smoothie is rich in fiber, antioxidants, and healthy fats, making it a satisfying and nutritious option for weight loss.

In a world of chaos, a well-made smoothie is a sip of serenity.

Nurturing Heart Health on a Plant Based Diet

Dear Sisters,

Did you know that taking care of your heart is an act of self-love and empowerment?

Keeping your heart healthy can go a long way toward enjoying years of good health. One of the easiest ways to get it on track is by making simple heart-healthy swaps in your meals. Here are some practical tips to help you hack your meals to make the most of your nutrition and put your heart and mind at ease.  💓💛💚

Be an advocate for your own health

Swap refined carbs with whole grains!

Whole grains contain fiber which lowers LDL cholesterol, commonly known as the bad type. Fiber takes longer for the body to digest, so you will feel full longer than you would if you eat refined carbs. Swap out white bread with whole wheat, choose oatmeal instead of corn flakes, and make brown rice your carb for balance in your meals.

Bake, Broil, or Steam rather than fry!

You can try a simple swap: swap out fried foods for baked or broiled. You'll notice that baked and broiled foods will taste better than fried foods, so this isn't a hard swap to stick to!

Steaming is a cooking method that involves using steam to cook food. It is considered one of the healthiest cooking techniques because it preserves the nutrients, flavors, and colors of the food while minimizing the use of added fats and oils.

Swap salt with spices!

Too much salt can cause issues. The spices in your spice rack are a far superior way to add flavor and nutrients without adding more salt. Make sure that spice blends do not contain sodium as they can cause blood pressure to rise to unhealthy levels.

Choose nuts over chips!!

If it's something crunchy you seek for a snack, choose nuts instead of going for chips. Nuts give you more fiber as well as unsaturated fat. Measure out some snack-sized servings of nuts to keep in your pantry for easy access.  Even better, buy your nuts in a shell and eat them the old-fashioned way by cracking the shell first on your own.

Use avocado rather than mayo!

Avocados are a heart-healthy swap you can use on your sandwiches. Instead of mayonnaise, mash up an avocado and smear it onto your whole grain bread or wrap. It will add more flavor and nutrition while keeping your chosen bread from feeling too dry.

Infuse water instead of drinking soda

Infusing water with lemon, cucumber, or herbs like mint gives it a delicious flavor and more nutrients. Choose to drink this over soda and other sugary drinks to keep your heart in good health.

Recipe of the month – Steamed Broccoli with Lemon and Garlic

Ingredients:

  • 1 head of broccoli, cut into florets
  • 2 cloves of garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Optional: Red pepper flakes for a bit of heat

Instructions:

  1. Prepare the broccoli by washing and cutting it into bite-sized florets.
  2. In a steamer basket or a steaming pot, bring water to a boil.
  3. Place the broccoli florets in the steamer basket and cover with a lid. Steam for about 5-7 minutes, or until the broccoli is tender but still crisp.
  4. While the broccoli is steaming, heat a small skillet over medium heat. Add a teaspoon of olive oil.
  5. Add the minced garlic to the skillet and sauté for about 1-2 minutes, until fragrant. Be careful not to let it brown.
  6. Once the broccoli is steamed, transfer it to a serving dish.
  7. Drizzle the lemon juice over the steamed broccoli.
  8. Pour the sautéed garlic over the broccoli.
  9. Sprinkle lemon zest over the top for added flavor.
  10. Season with salt, pepper, and red pepper flakes if desired.
  11. Gently toss the broccoli to ensure even distribution of the flavors.
  12. Serve the steamed broccoli as a healthy side dish or add it to salads, grain bowls, or as a topping for baked potatoes.

Enjoy your delicious and nutritious steamed broccoli with lemon and garlic.

Your wellbeing deserves all the attention it can get

By making these swaps, you'll be taking small steps to achieve big results with the health of your heart.

Presenting Healthy Strategies for Grilling

Your body is your temple, treat it with love and care this summer and always

Grilling your food is a delicious way to cook outdoors. Not only does it provide an excellent opportunity to enjoy the company of friends or neighbors, but it also allows you to change your dinner routine. When done correctly, grilling can be a healthy and delicious way to cook your favorite foods.

I was never a great griller.  I depended on my mom, brother, or husband to take care of that.    Since I became vegetarian at an early age or at least flexitarian, I was more fascinated with grilling vegetables and portabella mushrooms to see how it would turn out and how tasty we can make them.

So, here are a few healthy grilling tips to help you finish summer strong that I discovered in my experiments:

Use herbs!

When it comes to healthy grilling, fresh herbs are your friend. Not only do they add flavor to your food, but they can also help to boost the nutritional value of your meal. Rosemary, for example, is a powerful antioxidant that can help to protect your cells from damage. Thyme is a good source of Vitamin C, which helps to boost immunity. And basil contains anti-inflammatory compounds that can help to reduce inflammation. So next time you fire up the grill, reach for some fresh herbs to take your meal to the next level.

Prioritize veggies (and fruits!)

Next time you fire up the grill, try putting veggies and fruits front and center. Not only are they healthier options, but they're also just as delicious when cooked over an open flame. For example, grilled vegetables like zucchini, eggplant, and peppers are a great way to add flavor and nutrition to your meal. And fruit kabobs are a fun and easy way to enjoy summer fruits like cherries, peaches, and watermelon.

Make your own sauces!

Store-bought barbecue sauces and condiments can be loaded with sugar, sodium, and unhealthy fats. So why not make your own? It's easier than you think, and you can control the ingredients to ensure they fit into your healthy lifestyle.

Smart Side-Items

Focus on grilled fruits and vegetables as side dish options. These are not only healthy and delicious options, but they also contain important vitamins and minerals that can help you stay well. Typical barbeque side items such as potato salad, macaroni salad, and baked beans still have a place on your plate if you enjoy them. But when you prioritize your plate by filling it with mostly healthy options, you'll create healthy habits that stick while still enjoying all the delicious foods you love.

Avoid processed meats!

Hot dogs, sausages, and hamburgers are your usual barbeque go-to options. For healthier options, you can choose portobello burgers, veggie burgers, or high-quality chicken or turkey burgers.

"The more you care for your body, the more it will care for you during the summer and beyond."

Grilling out is a summer tradition, but it doesn't have to mean you can't eat nutritional foods that fuel you. Plenty of healthy options can fit into your grilled meal, including lean protein, veggie burgers, fruits and vegetables, and delicious side items to help you stay on track with your health goals while still enjoying your favorite grilled foods.

Lastly, invite family and friends to share in your healthy grilling journey. Embrace the communal spirit of BBQ gatherings, and watch as everyone appreciates the scrumptious, nourishing meals you've prepared.

Here's a delicious and easy veggie grill recipe that will tantalize your taste buds:

Grilled Veggie Skewers with Balsamic Glaze

Ingredients:

  • Assorted vegetables of your choice (e.g., bell peppers, zucchini, cherry tomatoes, red onions, mushrooms, and eggplant)
  • Olive oil
  • Salt and pepper to taste.
  • Wooden or metal skewers

Balsamic Glaze:

  • 1/4 cup balsamic vinegar
  • 1 tablespoon maple syrup or agave nectar
  • 1 clove garlic, minced.
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste.

Instructions:

  1. If using wooden skewers, soak them in water for about 30 minutes to prevent them from burning during grilling.
  2. Preheat your grill to medium-high heat.
  3. Wash and prepare the vegetables. Cut them into bite-sized pieces, making sure they are all roughly the same size for cooking.
  4. In a large mixing bowl, toss the vegetables with olive oil, salt, and pepper, ensuring they are all evenly coated.
  5. Assemble the skewers by threading the seasoned vegetables onto the skewers, alternating the different veggies to create colorful and appealing skewers.
  6. Place the veggie skewers on the preheated grill, making sure to leave enough space between them for even cooking.
  7. Grill the skewers for about 10-15 minutes, turning them occasionally to cook all sides until the vegetables are tender and have those beautiful grill marks.
  8. While the skewers are grilling, prepare the balsamic glaze. In a small saucepan, combine the balsamic vinegar, maple syrup (or agave nectar), minced garlic, and Dijon mustard. Heat the mixture over medium heat, stirring occasionally until it starts to thicken. Season with salt and pepper to taste.
  9. Once the veggie skewers are done, remove them from the grill and place them on a serving platter.
  10. Drizzle the balsamic glaze over the grilled vegetable skewers just before serving, allowing the sweet and tangy flavors to complement the smoky goodness of the grilled veggies.
  11. Serve the grilled veggie skewers with your favorite side dishes or a fresh green salad for a delightful and healthy meal.

Enjoy the burst of flavors and textures in this vibrant grilled veggie recipe that's perfect for vegetarians, vegans, and anyone who loves delicious, nutritious meals! 🌽🍅🍆🌶️🍢🍴

So, let this summer be the season of healthy grilling—where taste and nutrition come together on your plate. Fire up the grill, relish the aroma of deliciousness, and revel in the joy of cooking mindfully for yourself and your loved ones.

How to Stay Healthy This summer

"One way to keep momentum going is to have constantly greater goals"

I love summer for so many reasons.  The long days, the food, the outdoor concerts, and so much more.  Staying healthy during the summer is important for everyone, regardless of race or ethnicity. Here are some tips that can help anyone, including black women, maintain their health during the summer months:

  • Stay hydrated: Drink plenty of water throughout the day, especially when it's hot outside. Dehydration can lead to fatigue, headaches, and other health issues. Consider carrying a reusable water bottle with you wherever you go.
  • Protect your skin: Apply sunscreen with at least SPF 30 or higher to protect your skin from harmful UV rays. Look for a broad-spectrum sunscreen that protects against both UVA and UVB rays. Additionally, wear protective clothing, such as wide-brimmed hats, sunglasses, and lightweight, breathable fabrics to shield your skin from the sun.
  • Eat a balanced diet: Focus on consuming a variety of fruits, vegetables, whole grains, lean proteins, and healthy fats. Opt for seasonal produce and explore local farmer's markets for fresh options. Incorporate cooling foods like watermelon, cucumber, and berries into your meals to stay refreshed.
  • Stay active: Engage in regular physical activity to maintain your overall health and well-being. Find activities you enjoy, such as swimming, hiking, dancing, or cycling. Consider exercising in the early morning or evening to avoid the hottest parts of the day.
  • Practice self-care: Take time for yourself to relax, recharge, and reduce stress. Engage in activities that bring you joy and help you unwind, such as reading, practicing mindfulness or meditation, journaling, or engaging in hobbies. Prioritize self-care to support your mental and emotional well-being.
  • Protect your hair: If you have natural or chemically treated hair, take steps to protect it from the sun, chlorine, and saltwater. Consider using protective hairstyles, such as braids, twists, or updos, and use products with UV protection. Additionally, moisturize and deep condition your hair regularly to maintain its health.
  • Seek community and support: Connect with other black women who share similar health goals and interests. Join local groups or online communities that focus on health and wellness. Surrounding yourself with a supportive network can provide encouragement, motivation, and opportunities for shared experiences.  Sister to Sister a good resource for this.  Another good resource is the GirlTrek Organization.  I walk with them regularly.
Remember that everyone's health needs and preferences are unique, so it's important to listen to your body and adjust your habits accordingly. If you have specific health concerns, it's always a good idea to consult with a healthcare professional who can provide personalized advice.

Eating Clean Made Simple: Tips for a Healthier Lifestyle

Eating clean is all about making conscious decisions about what you put into your body. It means avoiding or extremely limiting processed and refined foods and choosing whole, natural options when possible. But eating clean isn’t just about eating healthy; it’s also about nourishing your body and mind. If you’re looking for ways to make the switch to a cleaner lifestyle easier, here are some tips to get you started.

Plan Ahead

One of the best ways to ensure you’re eating clean is to plan. This can be as simple as meal prepping for the week or taking the time on Sunday night to figure out what meals you want to make for the next few days. Planning will help you stay organized and ensure that your meals are nutritious and balanced. It will also save you time in the long run because you won’t have to scramble during the week trying to figure out what to eat each day.

Shop Smart

Shopping smart is another crucial component of eating clean. This means reading labels, researching brands, and understanding ingredients so that you can make informed decisions when purchasing food items at the grocery store or ordering takeout from restaurants. Try to buy locally sourced organic, hormone-free, pesticide-free, additive-free foods so that you know exactly where your food is coming from and how it was grown or produced.

Eat Whole Foods

In addition to shopping smartly, try to focus on eating whole foods rather than processed foods whenever possible. Whole foods are nutrient-dense foods like fruits, vegetables, nuts/seeds/grains, lean proteins, and healthy fats (e.g., olive oil). These foods provide essential vitamins and minerals that keep our bodies functioning properly and help us maintain a healthy lifestyle. Processed foods often contain added sugars, unhealthy fats/oils (e.g., trans fats), artificial flavors/colors/preservatives, etc., which can lead to weight gain and other health issues over time if consumed excessively or too frequently.

Stay Hydrated

Drinking plenty of water helps flush toxins from your system, keeps your energy levels up throughout the day, and aids digestion after meals. Aim for half of your body weight in ounces of water per day -- so, for example, if you are 150lbs, you will aim for 75oz.

Eating clean doesn’t have to be complicated or overwhelming – with a little bit of planning & shopping smartly paired with an emphasis on whole foods rather than processed options – it can become second nature.

Fabulous at 50 and Beyond

Growing Older:  Inevitable.  Feeling Older:  Optional!

I love this time in my life.  When I was in my fifties I belong to a mass movement of people who refused to go quietly into middle age.  I took the yearnings and desires of my heart, along with the dissatisfactions and deep questions, and turned them all into one big call to action!

Men and women age fifty and over can be found reinventing their lives, swapping careers, launching new businesses, bicycling around the world, and completing triathlons.

Dear Younger Me, You Will Get Much Better with Age

The truth is that getting older comes with challenges.  But it can be an exciting time in life.  I am honored to be among the ranks of  those who are confident enough in their skin to master the art of aging,  which enables me to rediscover my own capacities and to have the courage to make life fabulous at fifty and beyond.

Nine Tips for Being Fabulous Over 50

As you know now, I have spent the last 15 years of my life studying wellness, the art of aging and culinary nutrition as part of my wellness company, "Luv Your Healthy Life, LLC."

  • Drink six to eight glasses of pure water every day.
  • Sleep. Develop a regular sleep pattern.  Reduce caffeine intake (especially late in the day), reduce alcohol, and avoid eating large, fatty meals that will keep you up at night.  Try to aim for eight hours of sleep nightly.
  • Stretch.  Include stretching each day as a part of your balanced exercise program.  Focus on everyday activities that will increase movement such as taking the stairs instead of the elevator.
  • Strength-train.  To improve overall strength and endurance of muscles, be sure to include strength-training in your exercise routine.
  • Taste.  enjoy new flavors, cook with new spices, and eat all of the colors in nature!
  • Don't go back for "seconds"
  • Commit to live the life God intended for you - one of health, happiness, and purpose!
  • Commit to continued improvement in all areas of your health and relationships!
  • Laugh.  Laughter is truly the best medicine!  Through laughter, blood pressure goes down, muscles relax, and the brain releases endorphins that make you feel great.
These habits won't make you look 30 at 50, but will make you look and feel superb at midlife.

Eat to Live!

Real food heals.  Eat to feel younger and stronger everyday.  My new program that's launching soon is called 'Fabulous at 50 and Beyond' and will talk about nutrition among other relevant topics.  It is based on the Art of Aging.   This program is everything your mother never told you about getting older - beautifully.  It will be six weeks long.  You can do it at your own pace.

How I try to live my life:  Proper nutrition is an art.  It is an art form.  Every bite is a brush stroke.  Every swallow is a new color.  Each meal is a cloud or a tree or a flower  - a piece of a beautiful painting that you are becoming.  You are becoming an even more attractive work of art each day.  (A quote from Health Guru, David Wolfe).

Luv Your Healthy Life Breakfast Ideas!

Hi There,

I believe your health and how you feel about yourself and your body has a direct impact on how much you enjoy your life and even how much of yourself you can give to others.  You must have the energy and health to be able to give in the first place.

Today I have some breakfast ideas to share with you.  I highly recommend juicing in the morning.  These ideas are good if you don't have a juicer yet, or to have after your vegetable or green juice in the morning if you are still hungry.

Breakfast Idea #1 - Fresh Fruit!

Fruits are delicious and I encourage you to eat any of your favorite fruit.  You can whip these up in a smoothie with greens or enjoy a big bowl of your favorite fruits for breakfast.  Yum!

Breakfast Idea #2

This is for those of you who feel good with juices in morning for a lighter morning - a great rest for the digestive system so your body can focus on detoxifying and rejuvenating you rather than digesting.  Make plenty of juice, apple and greens or orange juice and green juice are winning combinations, and then try a carrot-based recipes which are more filling than just greens with lemons.  You can also enjoy herbal teas and hot or cold water with lemon and stevia or raw honey for a delicious lemonade.

Breakfast Idea #3 - Sprouted grain toast with avocado and tomato.

This is a heavier option that ideally you don’t want to have every day if you’re looking to lose weight.  However, if you are coming from having cereal and toast breakfasts or even heavier foods, then this option is a huge upgrade and so satisfying!  Toast some Ezekiel or your favorite sprouted grain bread and spread some ripe avocado on top with sliced tomato.  Sprinkle a little bit of sea salt and pepper for extra flavor or add some fresh or dried herbs.  I love fresh chopped basil!

Eating lightly in the morning may feel a bit strange to you, maybe even restrictive.  The truth is, eating fresh fruits, juices, and teas in the morning is the opposite of restriction.  You’re offering your body so much abundance in the form of nutrition, enzymes and hydration that we have been denying ourselves for years eating things like eggs, bacon, oatmeal, and cereal and milk.  It might just take a little bit of adjustment for your body to appreciate your lighter mornings but hang in there because soon you will be experiencing a wonderful charge of natural energy.

I hope this helps you to feel more comfortable about eating lightly in the mornings.  I gave up eating the standard American breakfast many years ago and when I think about how good I feel I don't miss it at all.

How do you know a whole food plant-based diet is for you?

As you know my kitchen and teachings are around a whole food plant-based diet.   You won't know if a plant-based diet is for you or not unless you try it!  So many people who make the switch report feeling much better, having less fatigue, losing excess pounds, and otherwise enjoying a healthy lifestyle.

In the meantime, please visit my website  https://www.luvyourhealthylife.com/ to get on the mailing list.  I am steps closer to launching the 30-Day Whole Food Plant Based course where you learn how to become leaner, healthier and happy.

Last but not least, I am available for one-on-one coaching and plant-based kitchen parties.

I look forward to hearing from you about your favorite soups and more.

Enjoy your healthy life,

Teri Sewell Huff, Integrative Nutrition Health Coach

An Easy Soup Recipe to try this March

Hello everyone,

March is still winter and winter is a great time to enjoy a good healthy soup.  Soup is good for your health offering so many benefits.    While some cream based soups can devastate a diet, most serve as a vehicle to meet your daily quota of vegetables and whole food plant based ingredients.   If you have produce that's about to pass its prime, tossing them into a soup recipe can give them new life.

Whenever possible, use homemade stock or broth.  Bouillon cubes, canned broth and box broth are often high in sodium and can be problematic.

My favorite soup recipes work for you if you are trying to lose weight or detox.

Recipe

This Hearty Black Bean soup is Vegan and Gluten Free.  This soup makes 4 servings (Serving Size: 2 Cups)

The benefits of black beans will blow you away.  How many of you know that beans are muscle building boys that deliver fiber and folate.  With more than thirty different kinds of antioxidants, this chunky meal is hearty, delicious, and most of all, fulfilling!

  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 1 medium red bell pepper, cored, seeded and diced
  • 1 cup tomato puree
  • 4 cups low-sodium vegetable broth
  • 3 cups cooked black beans, no salt added
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • Himalayan or sea salt and fresh

Heat the oil in a large pot over medium heat.  Add the onion and sauté for 3 to 5 minutes.  Stir in the carrots and bell pepper and sauté 2 minutes longer.  Add the tomato puree, broth, and beans and bring to a boil.  Reduce the heat, over, and simmer for 30 minutes.  Turn off the heat, stir in the garlic, red pepper flakes, and salt and pepper to taste; let stand, covered, for 10 minutes, then serve.

Make a large pot over the weekend, store in airtight containers and freeze.  You can reheat each portion of soup every weeknight or lunch next day and it'll only taste better each time!

I Went Plant Based Over 10 Years Ago

Plant-based eating, which is all about eating more vegetables, fruits, whole grains, and nuts (and few animal products), has become popular these past few years - and for good reason.

 Why More Plants?

At my best, I was attracted to and fascinated by healthy eating.  I was a vegetarian in my college days drinking smoothies and juicing.  At my worst, you might find me trying an Atkins diet eating more meat like it's no one's business.

As I reached a certain age, my mission was to live a strong, fit, sexy life until I am 80 and beyond.  Although I exercised regularly, my diet had left me feeling sluggish.  I became intrigued by the flexitarian, vegan, plant-based way of eating.

Studies had shown, that a predominantly plant-based lifestyle can improve your heart health, slow down cognitive decline, lower your risk for diabetes and support optimal gut health.  Some would say it is the best diet for the planet.  These benefits motivated me.

I decided to commit to the lifestyle over 10 years ago because so many things about my health felt off.

Getting Started

I was always googling the health benefits of the food I was eating.  In the beginning it was about adding more servings of vegetables and fruit.  Again, I had been a vegetarian in my younger life.  This time I was determined it would be a life changing commitment.

First Year - Not Bad

Not looking to be perfect was great for me.  The biggest challenge was the reaction of people around me who did not know what to do with the new choices I was making.  To make the transition to plant-based eating easier, I did not go cold turkey.  And I did not mind parting with meat, but giving up Greek yogurt was a different story.

I have to admit I did not focus on the grocery bill.  I just purchased what fit in my budget for the week and eliminated the things that were not considered healthy.

I noticed I spent a lot longer preparing meals than usual. Typically, I’d pop a piece of protein and some vegetables in the oven and have dinner ready in 20 minutes. Now, I spent that much time just chopping vegetables!

Alas, it all proved worthwhile.  I found myself energetic and productive and feeling lighter.  I started to really enjoy the challenge of preparing meals leading me to complete my studies as a Culinary Nutrition Expert.

Another quick and rewarding change took place in my stomach when I gave up dairy.  I used to feel heavy and slightly uncomfortable after most meals.  As I went vegan and introduced more vegetables , that feeling started to dissipate.

It took some effort, but I managed to continue this whole food plant based journey for years.  I truly enjoy eating out, traveling, socializing with no issues.  I will admit I randomly scarf down an unhealthy food.  We can talk about that another time.

In the end, my eating at least 90 percent plant based most days.  I could not believe how good I feel.  I was not about to give up my great energy, beautiful skin, and bloat free belly. I commited to living a mostly plant based life.  I may have a meat protein a couple time a month.   I will continue to enjoy all the vegan dishes that I discovered.  I am obsessed with Banana Oat Blender Pancake and Delicious Chickpea Scramble.
